The History of Fondue
Classic cheese fondue originated in Switzerland around the 18th century. In those days, it was customary to prepare cheese and bread during the summer to last through the winter. After several months, the cheese became very hard, and the Swiss came up with the idea of heating it over a fire in wine. When the cold season arrived, the whole family would gather in the evening around a pot of hot food. This is how the famous Swiss fondue was born. Cheese fondue is traditionally served with light dry white wine, cider, or clear apple juice.
Oil fondue appeared around the same time in the monastic vineyards of Burgundy. When the grapes ripened, they had to be harvested quickly, leaving no time for lunch. Then one lazy monk came up with the idea of heating oil and dipping meat taken from the abbot’s personal supplies into it.The Swiss developed this idea and, out of respect for the Burgundian grape harvesters, named the dish Fondue Bourguignon. It is made from cubes of fresh meat, which are fried in vegetable oil and then eaten with a variety of sauces. This fondue is traditionally served with salads, bread, and red wine.
In the 1970s, various dessert fondues became popular.The most popular of them is, of course, chocolate fondue: ripe fruits such as bananas and strawberries, as well as pieces of sponge cake or marshmallow, are dipped into melted chocolate. Chocolate fondue is made from dark chocolate mixed with cream. In addition, there are caramel fondues and fondues made from various syrups.
Sparkling wine, port wine, various liqueurs, and coffee are served with dessert fondues.
